- 2 eggs
- 1 tbsp milk
- Salt and pepper to taste
- 2 tbsp diced bell peppers
- 1 tbsp chopped jalapeños
- 2 tbsp black beans
- 2 tbsp shredded cheddar or pepper jack cheese
- 1 tbsp salsa or taco seasoning
- Optional: crushed tortilla chips, avocado for topping
Instructions
- Crack two eggs into a microwave-safe mug.
- Add 1 tbsp milk, salt, pepper, and your mix-ins (cheese, peppers, beans, etc.).
- Stir everything with a fork until well combined.
- Microwave on high for 60–90 seconds, then stir.
- Microwave again for 30–45 seconds, or until the eggs are set but still moist.
- Let it rest for 30 seconds before eating.
Notes
Use a tall, microwave-safe mug at least 12 oz in size. Fill only ¾ full to prevent overflow. Stir halfway and stop cooking when the center is just set to avoid rubbery texture.
