Ingredients

  • 2 eggs
  • 1 tbsp milk
  • Salt and pepper to taste
  • 2 tbsp diced bell peppers
  • 1 tbsp chopped jalapeños
  • 2 tbsp black beans
  • 2 tbsp shredded cheddar or pepper jack cheese
  • 1 tbsp salsa or taco seasoning
  • Optional: crushed tortilla chips, avocado for topping

Instructions

  1. Crack two eggs into a microwave-safe mug.
  2. Add 1 tbsp milk, salt, pepper, and your mix-ins (cheese, peppers, beans, etc.).
  3. Stir everything with a fork until well combined.
  4. Microwave on high for 60–90 seconds, then stir.
  5. Microwave again for 30–45 seconds, or until the eggs are set but still moist.
  6. Let it rest for 30 seconds before eating.

Notes

Use a tall, microwave-safe mug at least 12 oz in size. Fill only ¾ full to prevent overflow. Stir halfway and stop cooking when the center is just set to avoid rubbery texture.
