Instructions
- Use a 12 oz microwave-safe mug.
- Combine cornmeal, flour, baking powder, salt, and sugar in the mug.
- Stir in milk, oil (or butter), and egg until just combined; avoid overmixing.
- Microwave on high (1000W) for 60 seconds.
- Check with a toothpick; if batter remains, microwave in 10-second increments until set.
- Let rest in the microwave for 1 minute before serving.
Notes
Use a wide 12 oz mug to prevent overflow. Don’t overmix batter or overcook—aim for a tender interior. Resting ensures optimal texture.
